If it's rats, and you intend to bait for them, yes, remove all the food you can in preparation of baiting. You only want the bait available for taking, if possible. Pick up the dog dish too. Only feed him when you are watching, pick it up afterwards. And rats will hoard food when they get more than they need.

Unfortunately, I can't give you a specific exterminator's name close to you.... I usually advise people to get a trusted, local independent and to stay away from the biggies, where you often get a salesman first.
