One at a time? Over how long a period, you mean weeks? If this is a REAL exterminator, he's gonna want to do them one right after the other, until he's done. And I would expect that follow-up treatments would be required also.
And how bad are the roaches? Treatment intensity depends on conditions, and will also determine the time it takes to clear out the problem.
As far as packing a few roaches with your cabinet contents, of course, it's always possible, even probable. But modern treatments performed by licensed and experienced exterminators will take that into consideration, that's what baits, residuals and growth regulators are supposed to do, take care of those that come afterwards.
Regardless, you should be careful when you do pack up.
DON'T use Raid or insect bombs prior or after his visit. Tell her to follow up on treatments by putting her apt (and the bldg) on the exterminator's list when he comes. Monthly service, until she no longer sees any, is in order.
