The "smell" is what you want... So the underside, and just get the smell on it. I have also used vanilla flavoring if I didn't want the danger of missing a catch. Only a tiny bit - again, the smell is what you want.
You might also want to work on that trap, make that a hair trigger. I always had several traps that were favorites. Hava-Hart changed suppliers a few years ago and their quality assurance has suffered. Now I return at least 50% of the traps that come in. Many of my returns are because the traps are either mishandled in shipping or are "tippy" and make some squirrels jumpy.
